Bizcocho de chocolate / Chocolate cake

(For English version please read below)

A delicious snack or breakfast and, why not, if you decorated correctly as a birthday cake for the chocolate lovers...

For the dough you can use a gluten free mixture of flours, or as in my case I used 2 cups of rice flour and a cup of cornstarch. Once in the oven to see if the cake is ready tap with a stick and see that comes out clean. If not you have to leave for a few minutes more.

Alternatively you can cut the cake in half in the horitzontal way and add the jam to give a fruity touch. In that case you have to save the cake covered in the refrigerator.

INGREDIENTS:

- 3 eggs
- 1 plain yogurt
- 2 yogurt cups of cane sugar
- 3 yogurt cups of gluten free flour
- 1/2 yogurt cup of olive oil
- 1/2 sachet of baking powder
- 1 tablet of dark chocolate
- A few drops of anise or cognac
- Strawberry Jam, Apricot , ... (optional)
- Icing sugar (optional)

PREPARATION:

- In a bowl beat the eggs and the yogurt. Add the sugar, the flour and the baking powder and continue stirring until all ingredients are integrated.

- Grate half the chocolate as finely as possible. And add half to the mixture and reserve the rest. Add the oil, the anise or the cognac and beat again for about 5 minutes.

- Spread the dough in pan greased with oil and place in the oven on medium high for 35-40 minutes at about 170 ° C.

- Allow to cool. Melt the half remaining chocolate tablet and pour the mixture over the cake letting it cover the entire surface. Let cool to room temperature and finally pour the remaining chocolate chips. Sprinkle a couple of tablespoons of icing sugar. You are ready to enjoy!
